“Niseko Ezo Fuji” Sake, Made From Niseko Rice, Is Now Available

Niigata Prefecture’s Hakkaisan Brewery has for the third year produced a sake made with 100% Niseko Town rice.

 

The sake is called “Niseko Ezo Fuji”, ‘Ezo’ being the indigenous Ainu name for Mt. Yotei, and comes in two varieties.

The ginjo variety’s rice was 55% polished down in processing and has a sharp flavour, whereas the junmai daiginjo is made with 45% polished rice and is lighter with a fruity aroma.

Niseko Ezo Fuji is available at Hakkaisan Brewery’s Niseko Distillery and other stores in Greater Niseko and Hokkaido.
