Zangi Chicken

• Locally sourced chicken thigh
• Potato starch

Marinade

• 1 clove of garlic
• 1 small piece of ginger
• 3 tbs soy sauce
• 1 tsp sesame oil
• 1 tsp mirin (味醂 rice wine for cooking)
• 2 tbs saké
Dipping sauce
• Grated daikon (giant white radish)
• Ponzu (type of citrus) soy sauce
• Scallions

1. Cut the chicken thigh into bite-sized pieces
2. Mix marinade ingredients together and marinate for 5 minutes
3. Add some potato starch and mix through
4. Fry at 170˚C in oil
5. Mix the dipping-sauce ingredients and dip your zangi into this
6. Eat and enjoy!
