Setsu to Introduce More Michelin Cachet To Niseko

Setsu Niseko will offer one of the resort’s widest selections of restaurants under one roof when it opens in summer 2022.

 

Plans were still being finalised at the time of print, but Hirafu’s new largest condominium-hotel could house six dining venues, with chefs from Michelin-starred restaurants in Sapporo heading two of the venues.

The main all-day dining outlet will be a collaboration between Chef Hironori Sato (pictured) of Sapporo Michelin-starred French restaurant Meli Melo (French for “mishmash of fun”), and Masaya Ishii of Sapporo coffeehouse Baristart Coffee.

The new venture will be called Meli Melo – Yuki no Koe (Japanese for “snow voice”).

Chef Sato cultivated his culinary skills in France at Michelin three-star restaurants Astrance and Ledoyen, before moving back to Japan

Meli Melo – Yuki no Koe will serve Japanese and Western comfort foods, alongside a seasonal dinner menu showcasing Hokkaido ingredients sourced from local farms and fisheries.
